Vail, Colorado

On Saturday, August 14th, we moved from our lovely Park City condo and drove to Vail, Colorado.  Because I-70 was closed, and had been for two weeks because of mudslides, we went on a road we had never been on.  Brian helped us find it on the map when we visited on Friday.

We enjoyed the drive and seeing new country.

The flowers in Vail were breathtakingly beautiful.  These tuberous begonias were so beautiful.

On Sunday, we made lemon chicken for dinner.  It was delicious.

We went to the pool each day.  It was a nice indoor/ outdoor pool.  But the water was chilly.  We went early on Monday morning, but after that, went mid day when it was a little warmer.

Since I was a child, I have always loved hollyhocks.  They were everywhere.

We went out to dinner at a Chinese restaurant.

Ken's curry was a little too spicy,

But my honey almond shrimp was to die for.  I have got to find a recipe for this dish!

One of the mornings we went out for breakfast and had way too much food.

Our Vail condo

More gorgeous wild flowers.

Downtown Vail

Our table at Mo's Barbecue- one of our favorite restaurants.

I think this was the catfish sandwich.  Ah, I'm drooling.  Everything was absolutely delicious.

After dinner, we loved walking around the beautiful town, taking selfies.  It's one of our favorite things to do.

I got a lot of steps that day.

This was the view from our condo's deck.

For our anniversary, Ken found a cute German restaurant downtown called Aspen Rose and made reservations.  It was so fun and so reminiscent of our days in Austria.

I got Wienerschnitzel and spaetzel

Ken got beef roulade, spaetzel and rot kol.

This is outside of where we ate.

Our friend, Karey, recently visited Alaska and got a picture of herself kissing a live moose.  We had to recreate that with this statue and text it to her.  She got a kick out of it.

A sculpture in the town square.

This is my favorite flower picture and is the screen saver for my phone right now.  It brings me great joy.

Happy anniversary, dear!

We lucked into that the Vail Art Festival was being held that weekend.  We went on Friday morning.  It was so fun to stroll through the streets and look at all the art.

This sculptor is a BYU graduate and hoping to settle in Utah.  He has been doing post-graduate studies in France.  He was a very interesting guy.

He was a nice guy and did beautiful work.

We didn't buy much on the whole trip, but splurged and bought specialty balsamic vinegars and oils from one of the vendors.  We have been happy with our purchases.
We enjoyed Mo's Barbecue so much, we went back there for our final lunch of our trip.

I got a box lunch!  When I was a girl, we were in the Nampa stake.  Back then, stake conference was two sessions, one in the morning and one in the afternoon.  Between, you could buy box lunches.  I LOVED stake conference because of those box lunches.  We ordered our lunch to go at Mo's and I got a box lunch!  I was thrilled.

Throughout the trip, we both spent time on our computers, working on this blog, personal history stories, indexing and family history.  We had to share a mouse, as I forgot mine.  Ken's turn here.

For the last dinner of our trip, we went back to China Garden.  This time, we both got the honey walnut shrimp.  Yea!

On Thursday night, I-70 was closed again because of mudslides.  We worried we wouldn't get through, but they opened the road on Friday morning.  They were watching it closely.  We got through, but the rains came right after we got through.  It was interesting to see the damage.  Crews were working on restoring the road all the way through.

For lunch on the way home, we got Qdoba.  We really enjoyed it.

After being gone three weeks, it was nice to be home in St. George.  We were only there a few days before heading out again.  Stay tuned . . .
