Sweet pickled beets have long been one of my favorite things on a salad bar. I was excited to find these at Costco. Now I can have them any time I want at home! They are really yummy on salads or just as a little enhancement to any dinner.

Me, too, Kay! In those salad bars where they weigh your salad to see how much to charge you, I always weigh my salad down with those beets, but it is worth it! I'll have to try the Costco ones.

I have to say that pickled beets are one of my favorite things also - it must be in our genetic make up!
